W/I freezer..mismatched system..??

I think this walk in freezer is not sized correctly... I'll provide as much info as i can.
its a 7&1/2 by 9 by 7&1/2 foot tall. 1 door. located indoors in a kitchen....kitchen A/C doesnt work too well and humidity is kinda high. Condensing unit sits atop the box, not enclosed and open to the kitchen ambient air with drop ceiling above it.
Evap: climate control LSF075BK
Condensing unit is a tecumseh, model # is gone, and the compressor (replaced by other company a while ago) is a copeland CF09k6E-PFV.

This place just went under new ownership and completely remodeled. old owners took W/I cooler equipment and left the freezer. We sized &installed cooler equipment, works great, no issues.
Freezer has Never worked right since startup, we've had numerous service calls on it all for it freezing up.
We've tried 8 defrosts a day and even more than that but it still freezes up and runs warm. We reconditioned the door, installed new gaskets, new trim and hardware, so everything is sealing good. they "say" they don't leave the door open...I sat and watched them for a while and they do leave it open for a bit sometimes but it always gets shut.

Basically...I "think" the evaporator is too small and I'm pretty sure that's not the right "crossed compressor" for that condensing unit. Runs really high head pressure like 350 with 83 ambient air. and what happens is right after defrost after only 30 mins of running the whole front of the evap is practically all frosted up, blocks air flow and needs defrosted again.

My pressures start ok after defrost...35 suction, but high head 350, 34F suction line @ comp. then as unit starts freezing up i end up with 15 suction 280 head, 21F suction line.
the sticker for the tecumseh condensing unit is gone but I have a "hunch" that the comp that was there was an AWA2460ZXT which I'm pretty sure doesn't cross to the copeland CF09.

So that's where i am. I ended up putting all points possible in the defrost clock. 30 mins each, It can never pull the damn thing below 15 because once it gets to that point it needs to defrost again because all the airflow is blocked now. I think Its a combination of mismatched equipment and/or the high humidity in the kitchen...??
